Preparation took around 30 minutes and the steaming was 30 minutes so everything done in 1 hours time The verdict Pretty good NB For those of you that never tried longan in cakes please try using it as the flavour as opposed to raisins which is sooo traditional is pretty unique

why do cakes sink in the middle?
Q. No matter what i do, they sink. The only reason I knew of cakes to sink was if you took it out of the oven too soon or even opened the over door before the cake was done. I always cook them until they're done without opening the oven door but for some reason, after they're out of the oven for a few minutes, i look over and the middle has sunk! I live on an island, so does being at sea level have something to do with it?

A. Usually, cakes sink for one of 2 reasons. Either they are not done (do you check with a toothpick or cake tester in the middle for doneness?) or the batter is too wet (try slightly decreasing one or more of the liquid ingredients).
